If you use Downsizing Diva Durham for your next move, you will find our own ‘calling card’, a plate of delicious homemade cookies to enjoy with your tea or coffee after a long, tiring move day.
This favourite recipe of ours has been enjoyed in our family for many, many years. Not proud, but Diva Robin makes them the best! Hey, for GF folks like me, this recipe works wonderfully with Bob Red Mill's 1-1 Gluten Free flour. I haven't tested other GF brands, but I am sure they would work. The cookies are flatter than the non GF cookies, but my taste buds didn't seem to care.
We hope our customers have enjoyed these over the past few years. Our favourite movers certainly have!
Chocolate Chip Oatmeal Cookie Recipe
(Can be doubled)
Ingredients:
· 1 cup butter
· I cup brown sugar
· 2/3 cup white sugar
· 1 tsp vanilla
· 2 cups One Minute Oats
· 1 pkg. semi or dark chocolate chips
· 2 crushed Aero Bars
· 2 cups flour
· 1 tsp baking powder
· I tsp baking soda
· ½ tsp salt
Options: You can leave out the Aero bars if you don’t have them on hand. Maybe toss in a hand of nuts or Skor bits if that suits your fancy.
Instructions:
1. Preheat oven to 350 degrees
2. Cream together butter, sugars and vanilla until blended well
3. Add eggs one at a time and blend again
4. Sift flour with baking powder, baking soda and salt. Add in oatmeal and stir
5. Mix dry ingredients with wet ingredients just until blended
6. Fold in chocolate chips and crushed Aero Bars
7. Chill for at least ½ hr
8. Scoop mounds on parchment lined baking sheets
9. Bake for 10-14 minutes
